Mom’s Special Chicken Biryani
One weekend, our extended family gathered at our house. My cousins, aunts, and little cousins were all excited. Mom smiled and said, “Today, I will make something special for everyone.” And so began the preparation of her famous Chicken Biryani.
Ingredients:
- 1 kg chicken (cut into pieces)
- 3 cups basmati rice
- 2 large onions (fried until golden)
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 4 tbsp cooking oil
- Fresh coriander & mint leaves
- Salt to taste
Mom first marinated the chicken with yogurt, ginger-garlic paste, red chili, and salt. We all stood around the kitchen, watching every step. The kids were excited and even helped fry the onions while sneaking a few tastes!
Meanwhile, the rice was washed and boiled for 20 minutes. Mom then carefully layered the chicken and rice in a large handi, topping it with fried onions, fresh coriander, and mint leaves. When she lifted the lid, the aroma filled the entire house, making everyone’s mouth water.
We all served the biryani together. Each bite was a perfect blend of spices and tender chicken. My cousins praised Mom, saying it was the best biryani they had ever tasted!
